Changing the local definition of Italian food
If you don’t know L’INCANTO, you don’t know the full meaning of Italian food. Many South Carolinians think pasta and marinara, sure. But do they think porchini mushrooms and truffles and veal?
Those ingredients happen to be some of Chef Carlos’s favorites to prepare. He enjoys surprising guests with the flavors of fresh seafood and Mediterranean infusion, surpassing any preconceived notions.
His 35 years of experience also come into play with this decadent cooking style. Dishes stay true to traditions of the Italian North, where Chef learned his culinary art first hand.
“We are changing people’s minds about what Italian food is. It’s not just the ‘red sauce’ that locals find everywhere else. It can be diverse and interesting.”
