A master of fine Northern Italian food
Carlos Echeverri is native to Colombia, South America. He first came to the United States at age 21 and started working as a dishwasher in New York City. He was curious and attentive, and after six months spent prepping vegetables, he was promoted. He became the right-hand-man of the restaurant owner and quickly advanced.
Carlos traveled to Italy to volunteer in kitchens. He discovered a love for Northern Italian style cooking and studied it intently. He returned to the states with impressive recipes and skills that wooed diners. Eventually he was elevated to Executive Chef and oversaw all seven restaurants in the NYC group.
In 2007, Chef Carlos was contacted by a restaurant owner in South Carolina. His reputation preceded him. He was being specifically sought after for a new role. And it worked. Carlos relocated to Greenville to act as Executive Chef for the new venture Coal Fired Bistro.
A couple years later, Carlos met and married his wife Kristi. They opened their own restaurant together in 2013. Carlos continued to impress and make a name for himself at Da Vinci’s for five years.
In December 2018, the couple opened L’INCANTO in Greer, SC. “The Charm” offers the finest Northern Italian cuisine – that’s as unique and exclusive as Chef Carlos himself.
